Do Nothing Tornado Cake!

  • Cake:
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 2 cups granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 20 oz can crushed pineapple
  • Topping:
    • 1/2 cup salted butter
    • 1/2 teaspoon vanilla extract
    • 2/3 cup evaporated milk
    • 1 cup granulated sugar
    • 1 cup chopped pecans
    • 1 cup sweetened coconut flakes


  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, baking soda, and granulated sugar.
  3. Beat in the eggs and vanilla extract until well combined.
  4. Stir in the crushed pineapple (with juice) until evenly distributed.
  5. Pour the batter into the prepared baking dish and spread it out evenly.
  6. In a saucepan, combine the butter, vanilla extract, evaporated milk, and granulated sugar for the topping. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  7. Remove the saucepan from the heat and stir in the chopped pecans and sweetened coconut flakes.
  8. Pour the topping evenly over the cake batter in the baking dish.
  9. Bake in the preheated oven for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool slightly before serving. Enjoy!
