  • 8-10 cups low sodium chicken broth, divided
  • 1 14 oz. can crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons granulated sugar
  • 1 tablespoon dried basil
  • 1 tsp EACH dried parsley, dried oregano, salt
  • 1/2 teaspoon pepper
  • 1 whole bay leaf
  • 10 uncooked lasagna noodles broken into approx. 1-2 inch pieces*
  • 1/2 cup heavy cream, optional**
  • CHEESE GARNISH: shredded mozzarella cheese, freshly finely grated Parmesan cheese, ricotta cheese

Instructions:

  1. Brown the Meat: In a large pot, cook the ground beef or Italian sausage over medium heat until browned. Add diced onion and minced garlic, cook until fragrant.
  2. Add Seasonings and Sauces: Stir in red pepper flakes, Prego Traditional Italian Sauce, crushed tomatoes, tomato paste, balsamic vinegar, sugar, dried basil, parsley, oregano, salt, pepper, and bay leaf.
  3. Simmer the Soup: Pour in 8 cups of chicken broth and bring to a boil. Once boiling, reduce the heat and let it simmer for 20-30 minutes, allowing the flavors to meld together.
  4. Cook the Noodles: Break lasagna noodles into small pieces and add them to the pot. Let the soup simmer until noodles are tender, about 10-12 minutes. If the soup becomes too thick, add more chicken broth as needed.
  5. Finish with Cream (Optional): Stir in heavy cream if desired, for added richness and creaminess.
  6. Serve and Garnish: Ladle the soup into bowls and top with shredded mozzarella, grated Parmesan, and a dollop of ricotta cheese.
